Hot Spinach Feta Dip

INGREDIENTS
  • 8 oz. cream cheese, softened
  • 1/2 c. sour cream
  • 1 c. crumbled feta
  • Juice of 1/2 lemon
  • 2 c. shredded mozzarella, divided
  • 1 c. frozen spinach, defrosted and squeezed dry
  • 2/3 c. Roasted Red Peppers, drained and chopped
  • kosher salt
  • Freshly ground black pepper
  • Freshly chopped parsley, for garnish



DIRECTIONS
  1. Preheat oven to 350°. In a large bowl, combine cream cheese, sour cream, feta and lemon juice. Stir until the mixture is evenly combined and as smooth as possible. Stir in 1 1/2 cup mozzarella, spinach and most of the roasted red peppers (reserve some for topping) then season with salt and pepper.
  2. Transfer mixture to a small baking dish. Top with remaining mozzarella and roasted red peppers.
  3. Bake until bubbly, about 15 minutes. (If desired, broil 3 minutes.)
  4. Garnish with parsley and serve.
